Ingredients

3/4 cup dry bread crumbs1 tablespoon minced fresh parsley2 teaspoons grated lemon zest1 garlic clove, minced1/4 teaspoon kosher salt1/4 teaspoon pepper2 tablespoons olive oil4 cod fillets (6 ounces each)

Preparation

In a shallow bowl, combine the first 6 ingredients. Brush oil over 1 side of fillets; gently press into crumb mixture.

Place crumb side up in a 13x9-in. baking dish coated with cooking spray. Bake at 400° just until fish begins to flake easily with a fork, 15-20 minutes.
