Ingredients

1-1/4 cups all-purpose flour1 tablespoon sugar1 teaspoon baking powder1/2 teaspoon baking soda1/2 teaspoon salt1 large egg, lightly beaten1-1/4 cups buttermilk2 tablespoons canola oil1 cup fresh or frozen blueberries, optional

Preparation

In a large bowl, combine flour, sugar, baking powder, baking soda and salt. Combine egg, buttermilk and oil; stir into dry ingredients just until blended. If desired, fold in blueberries.

Preheat griddle over medium heat. Lightly grease griddle. Pour batter by 1/4 cupfuls onto griddle; cook until bubbles on top begin to pop and bottoms are golden brown. Turn; cook until second side is golden brown.
