Ingredients
1 package (28 ounces) frozen potatoes O’Brien , thawed1 pound bacon strips, cooked and crumbled2 cups shredded Swiss cheese12 large eggs2 cups 2% milk1 teaspoon seasoned salt1 teaspoon pepperMinced chives, optional
Preparation
In a greased 4- or 5-qt. slow cooker, layer potatoes, bacon and cheese. In a large bowl, whisk eggs, milk, seasoned salt and pepper; pour over top. Cook, covered, on low 4-5 hours or until eggs are set. Turn off slow cooker. Remove crock insert to a wire rack; let stand, uncovered, 30 minutes before serving. Garnish with minced chives, if desired.
