Ingredients
1 package yellow cake mix (regular size)1 cup orange juice3 large eggs, room temperature1/3 cup water1/3 cup canola oilFROSTING:1 package (8 ounces) cream cheese, softened1/4 cup butter, softened1 tablespoon orange marmalade3 cups confectioners’ sugar
Preparation
Preheat oven to 350°. In a large bowl, combine cake mix, orange juice, eggs, water and oil; beat on low speed for 30 seconds. Beat on medium for 2 minutes.
Pour into a greased 9x9-in. baking pan. Bake until a toothpick inserted in the center comes out clean, 30-35 minutes. Cool on a wire rack.
For frosting, in a small bowl, beat cream cheese and butter until smooth. Beat in orange marmalade and confectioners’ sugar. Spread over cake. If desired, swirl with additional orange marmalade. Store in the refrigerator.
