Ingredients

6 cups all-purpose flour6 cups biscuit/baking mix2 cups sugar2 tablespoons baking powder6 large eggs, room temperature2 to 3 tablespoons grated orange zest4 cups orange juiceOil for deep-fat fryingConfectioners’ sugar

Preparation

In a large bowl, whisk flour, biscuit mix, sugar and baking powder. In another bowl, whisk eggs, orange zest and orange juice until blended. Add to dry ingredients, stirring just until moistened.

In an electric skillet or deep fryer, heat oil to 375°. Drop batter by rounded tablespoonfuls, a few at a time, into hot oil. Fry about 1-2 minutes on each side or until golden brown. Drain on paper towels; cool slightly. Dust with confectioners’ sugar.
