Ingredients
1 cup orange juice1 cup water1 teaspoon ground cumin1 package (10 ounces) couscous2 tablespoons olive oil2 tablespoons lime juice2 tablespoons reduced-sodium soy sauce1/4 cup minced fresh cilantro2 tablespoons minced fresh basil or 2 teaspoons dried basil2 tablespoons minced chives1 teaspoon minced fresh gingerroot1/4 teaspoon salt1 can (11 ounces) mandarin oranges, drained1/4 cup slivered almonds, toasted
Preparation
In a large saucepan, bring orange juice, water and cumin to a boil. Stir in couscous; remove from the heat. Cover and let stand for 5 minutes or until liquid is absorbed; fluff with a fork.
Transfer to a large bowl; cool.
In a small bowl, whisk the oil, lime juice and soy sauce. Stir in the cilantro, basil, chives, ginger and salt. Pour over couscous and toss to coat. Add oranges and almonds; toss gently. Refrigerate until serving.
