Ingredients

1/3 cup olive oil1/4 cup orange juice3 tablespoons vinegar1 garlic clove, minced1 teaspoon minced fresh parsley1/4 teaspoon saltDash pepper8 cups torn spinach or mixed greens3 medium oranges, peeled and sliced1 cup sliced red onion1/2 cup crumbled blue cheese1/4 cup slivered almonds, toasted

Preparation

In a small bowl, whisk the first 7 ingredients. On a serving platter or individual plates, arrange greens, oranges and onion. Drizzle with dressing. Sprinkle with cheese and almonds.
