Ingredients

2 large eggs, room temperature3/4 cup honey3/4 cup quick-cooking oats3/4 cup sweetened shredded coconut3/4 cup packed brown sugar1/2 cup butter, softened1/2 cup dried currants1/2 cup chopped walnuts1 unbaked pie pastry (9 inches)Whipped cream, optional

Preparation

In a bowl, beat eggs. Add honey, oats, coconut, brown sugar, butter, currants and walnuts; mix well. Pour into pie shell.

Bake at 350° until browned and a knife inserted in the center comes out clean, 40-45 minutes. Cool. Garnish with whipped cream if desired.
