Ingredients

1-1/4 cups all-purpose flour1/4 cup sugar1/2 teaspoon baking soda1/2 teaspoon each ground ginger, cinnamon and nutmeg1/4 teaspoon salt1 egg1/2 cup water1/4 cup vegetable oil1/4 cup molasses

Preparation

In a large bowl, combine the dry ingredients. In another bowl, beat egg, water, oil and molasses. Stir into dry ingredients just until moistened.

Fill greased or paper-lined muffin cups two-thirds full. Bake at 325° for 20-25 minutes or until muffins test done. Cool in pan for 5 minutes before removing to a wire rack to cool completely.
