Ingredients
1-1/2 pounds boneless skinless chicken breasts, cubed4-1/2 cups chicken broth3 medium carrots, sliced2 medium potatoes, peeled and cubed1 medium onion, chopped1 celery rib, chopped3 bay leaves3/4 teaspoon salt1/4 teaspoon pepperDUMPLINGS:3/4 cup all-purpose flour3 teaspoons dried parsley flakes1-1/2 teaspoons baking powder Dash ground cloves1/8 teaspoon salt1/3 cup 2% milk
Preparation
In a large saucepan, combine the first 9 ingredients; bring to a boil. Reduce heat; cover and simmer for 15 minutes or until vegetables are tender. Discard bay leaves.
For dumplings, in a small bowl, combine flour, parsley, baking powder, salt and cloves. Stir in milk just until moistened. Drop by tablespoonfuls onto simmering chicken mixture. Cover and simmer until a toothpick inserted in a dumpling comes out clean, 12-15 minutes (do not lift the cover while simmering).
