Ingredients
3 cups all-purpose flour2 cups sugar3 teaspoons baking powder1 teaspoon salt1 teaspoon ground cinnamon1/4 teaspoon baking soda3 large eggs, lightly beaten1-1/2 cups canola oil1-1/2 teaspoons vanilla extract1 can (8 ounces) unsweetened crushed pineapple, undrained2 cups cubed firm bananas1 jar (10 ounces) maraschino cherries, drained1 cup chopped walnuts1-1/2 teaspoons confectioners’ sugar
Preparation
In a large bowl, combine the first six ingredients. In a small bowl, combine the eggs, oil and vanilla. Beat into dry ingredients just until combined (batter will be thick). Stir in pineapple. Fold in the bananas, cherries and walnuts.
Transfer to a greased and floured 10-in. fluted tube pan. Bake at 350° for 60-70 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack to cool completely. Dust with confectioners’ sugar.
