2 eggs

pinch salt

pinch Pepper

A few drops of hot pepper sauce (optional)

1 tomato

handful sprouts

1/4 c. cream cheese (about 2 ounces)

Preparation

Step 1Heat the nonstick skillet over medium heat. When it’s hot enough to make a drop of water sizzle, it’s hot enough to cook your eggs.Step 2Crack the eggs into the mixing bowl. Add the salt, pepper, and hot pepper sauce, and beat with the fork. Pour the eggs into the skillet so they cover most of the pan. Let them cook undisturbed until the edges get solid.Step 3After the edges are solid, scatter the tomato, sprouts, and cream cheese over one side (one half) of the cooked egg.Step 4When the eggs are no longer runny, carefully slip the spatula under the half without the goodies. With one quick flip, fold the egg in half. Did you get it all in one piece? Congratulations! Did it tear? No biggie—it’ll still taste great.Step 5Turn off the stove, slide the omelet onto a plate, and enjoy.Step 6Mix in these ingredients for a variation that’s full of flavor: Make Mmmushroom: Use sliced mushrooms, sliced or grated Swiss cheese, and rosemary as your filling. Spintacular: Spinach, sliced or grated cheddar cheese, cream cheese, and a pinch of nutmeg make a spectacular omelet. Sweet Stuff: Forget about the veggies and instead use cream cheese and your favorite jam to taste. Appleicious: Combine sliced apples, sliced or grated cheddar cheese, and deli turkey as your filling.
