4 oz. PHILADELPHIA Neufchatel Cheese

3 tbsp. butter

1/4 c. apple butter

2 c. powdered sugar

c. butter

1/2 c. packed brown sugar

1/4 c. granulated sugar

1/2 tsp. baking powder

1/4 tsp. baking soda

1/4 tsp. cinnamon

1 egg

1/2 tsp. vanilla

3/4 c. flour

1 c. rolled oats

c. peeled and chopped apples

Preparation

Step 1Preheat oven to 375 degrees F.Step 2The apple butter and Neufchatel cheese mixture must be made first. With a hand mixer, mix PHILADELPHIA Neufchatel Cheese, 3 tablespoons butter, and apple butter. Slowly add powdered sugar and mix until smooth. Place in the refrigerator immediately. Mixture needs to become more solid for easier spreading.Step 3To make the cookies, start by mixing 1/3 cup of butter in a large bowl. Add brown sugar, granulated sugar, baking powder, baking soda, and cinnamon.Step 4Once mixed, beat in egg and vanilla. Beat in flour. Stir in oats and apples.Step 5Drop cookie dough onto an ungreased cookie sheet (12 per batch equals 2 batches). Bake for 8 to 10 minutes. Allow to cool.Step 6Once cooled, remove the apple butter and Neufchatel cheese mixture from the refrigerator. Spread mixture on the bottom side of one cookie, making a sandwich with another.
