Ingredients

1-1/2 cups all-purpose flour1-1/2 teaspoons baking powder3/4 teaspoon salt1/2 teaspoon ground nutmeg1/4 teaspoon baking soda2 eggs3/4 cup sugar1/3 cup canola oil3 tablespoons milk1-1/2 cups diced peeled apples1 cup chopped walnuts3/4 cup sweetened shredded coconut

Preparation

In a large bowl, combine the flour, baking powder, salt, nutmeg and baking soda. In another bowl, beat eggs, sugar, oil and milk. Stir in apples, nuts and coconut. Stir into dry ingredients just until moistened.

Fill 18 greased muffin cups three-fourths full. Bake at 350° for 20-25 minutes or until a toothpick comes out clean. Cool in pan 10 minutes before removing to a wire rack.
