Ingredients

1-1/4 cups all-purpose flour1 teaspoon baking powder1 teaspoon ground cinnamon1/2 teaspoon salt1/2 teaspoon ground nutmeg1/4 teaspoon baking soda1 egg, lightly beaten1 cup fat-free milk1 teaspoon canola oil1 teaspoon vanilla extractButter and maple syrup, optional

Preparation

In a small bowl, combine the flour, baking powder, cinnamon, salt, nutmeg and baking soda. In another bowl, combine the egg, milk, oil and vanilla; stir into dry ingredients until smooth.

Bake in a preheated waffle iron according to manufacturer’s directions until golden brown. Serve with butter and syrup if desired.
