Ingredients
8 large eggs, lightly beaten2 cups cooked crumbled sausage or cubed fully cooked ham2 cups cubed process cheese (Velveeta)2 cups milk1 cup crushed saltines (about 24 crackers)1/4 cup chopped onion1/4 cup chopped green pepper1/4 cup chopped sweet red pepper1/2 to 1 teaspoon salt
Preparation
In a large bowl, combine all ingredients. Pour into a greased shallow 3-qt. or 13x9-in. baking dish.
Bake, uncovered, at 350° until a knife inserted in the center comes out clean, for 45 minutes. Let stand for 5 minutes before serving.
