Ingredients
Cooking spray
10 graham crackers, finely crushed
6 tbsp. melted butter
1/3 c. granulated sugar
Pinch kosher salt
1 (12-oz.) package large marshmallows
1 (15-oz.) can pumpkin puree
1 tsp. McCormick pumpkin pie spice, plus more for garnish
2 c. whipped topping, plus more for serving
Preparation
Step 1Grease a 9" pie dish with cooking spray. In a medium bowl, combine graham crackers, melted butter, sugar, and a pinch of salt. Press graham cracker mixture firmly into bottom and sides of prepared pie dish.Step 2In a medium saucepan, combine marshmallows, pumpkin puree, and pumpkin pie spice. Place over medium heat and cook, stirring, until marshmallows are melted and combined. Remove from heat and scrape into a large bowl. Let cool to room temperature. Step 3Fold whipped topping into pumpkin mixture and scrape into prepared crust. Smooth top and refrigerate until set, about 2 hours. Step 4Pipe whipped topping around edge of pie and sprinkle with more pumpkin pie spice.
