Ingredients
1 package (0.3 ounce) sugar-free lemon gelatin1/2 teaspoon ground cinnamon1/4 teaspoon ground nutmeg1-3/4 cups water, divided5 medium tart apples, peeled and sliced1 package (0.8 ounce) sugar-free cook-and-serve vanilla pudding mix1/2 cup chopped nuts1 reduced-fat graham cracker crust (9 inches)Whipped topping, optional
Preparation
In a large saucepan, mix gelatin, cinnamon, nutmeg and 1-1/2 cups water. Add apples; bring to a boil. Reduce heat; simmer, covered, until apples are tender, about 5 minutes.
In a bowl, mix pudding mix and remaining 1/4 cup water; stir into apple mixture. Cook until thickened, about 1 minute, stirring occasionally. Remove from heat; stir in nuts. Transfer to crust.
Refrigerate at least 2 hours before serving. If desired, serve with whipped topping.
