Ingredients

1-1/2 teaspoons grated lime zest2 tablespoons lime juice2 tablespoons honey1/2 teaspoon ground ginger1/4 teaspoon cayenne pepper6 medium nectarines, cut into 1-inch pieces (about 4 cups)2 cups seedless red grapes1/4 cup chopped fresh mint1/2 cup mascarpone cheese2 tablespoons confectioners’ sugar2 tablespoons 2% milk1/4 teaspoon vanilla extract1/3 cup chopped pistachiosFresh mint leaves

Preparation

In a small bowl, whisk the first 5 ingredients. Place nectarines, grapes and mint in a large bowl. Drizzle with honey mixture; stir gently. Refrigerate, covered, 1-2 hours. For topping, mix mascarpone, confectioners’ sugar, milk and vanilla. Serve fruit salad with topping, pistachios and fresh mint leaves.
