Ingredients
1 package McCormick ONE Sheet Pan Farmers Market Seasoning Mix
2 tbsp. tablespoons oil
1 1/2 lb. boneless chicken breasts
4 c. assorted fresh vegetables, cut into 1" chunks
1 package McCormick ONE Sheet Pan Farmers Market Seasoning Mix, divided
3 tbsp. plus 1 tsp. extra-virgin olive oil, divided
4 (6-oz.) salmon fillets
2 c. broccoli florets
1 1/2 c. mini sweet bell peppers, sliced into rings
1 small red onion, chopped
Juice of 1/2 lime
1 tsp. honey
Preparation
Step 1Preheat oven to 400°. Mix Seasoning Mix and oil in large bowl.Step 2Add chicken and vegetables; toss to coat. Place in single layer on large shallow foil-lined sheet pan sprayed with no stick cooking spray.Step 3Bake 30 minutes or until chicken is cooked through.
Step 1Grease a large baking sheet with olive oil. Add vegetables in a single layer. Step 2Set aside 1 tablespoon of McCormick ONE seasoning for the glaze. Mix 3 tablespoons of olive oil with the rest of the McCormick ONE seasoning. Pour over vegetables and quickly mix to coat them in the seasoning. Step 3Bake vegetables for 12 minutes. Step 4Meanwhile, make glaze: Whisk together remaining 1 tablespoon McCormick ONE seasoning, lime juice, honey, and remaining 1 teaspoon olive oil. Spread over the salmon fillets. Step 5Carefully remove baking from the oven and nestle salmon fillets in vegetables. Return to oven and bake for 12 more minutes.Step 6While salmon is cooking, prepare 4 servings of microwave rice. Remove sheet pan from oven and serve salmon and vegetables over rice.
