Ingredients

1 package (10 ounces) miniature marshmallows3 tablespoons canola oil2 teaspoons coffee extract5 cups Rice Krispies1 cup chocolate-covered espresso beans, coarsely chopped and divided2 cups dark chocolate chips, melted

Preparation

In a microwave or a large saucepan over low heat, melt marshmallows in oil; stir until smooth. Remove from heat; stir in extract. Stir in cereal and 1/2 cup espresso beans. Press mixture into a lightly greased 13x9-in. baking pan, using waxed paper or a lightly greased spatula. Cool to room temperature. Spread melted chocolate on top; sprinkle with remaining 1/2 cup espresso beans. Cut into bars.
