Ingredients

2-1/2 cups all-purpose flour1-1/4 cups sugar2 packages (3.4 ounces each) instant vanilla pudding mix1-1/4 teaspoons baking soda1 teaspoon salt1 teaspoon ground cinnamon5 eggs, lightly beaten2 cups mashed ripe bananas (4 to 5 medium)1 cup canola oil1 teaspoon vanilla extract1 cup chopped nuts, optional

Preparation

Preheat oven to 350°. In a large bowl, combine first six ingredients. In a large bowl, whisk eggs, bananas, oil and vanilla. Stir into dry ingredients just until moistened. Stir in nuts if desired.

Transfer to two greased 8x4-in. loaf pans. Bake 55-65 minutes or until a toothpick inserted in center comes out clean. Cool 10 minutes before removing from pans to wire racks.
