Ingredients

2 tbsp. white or yellow miso

4 tsp. freshly grated ginger

2 tsp. honey

2 tsp. packed brown sugar

2 tbsp. apple cider vinegar

4 tsp. extra-virgin olive oil

1 tsp. toasted sesame seeds

Preparation

Step 1In a medium bowl, combine all ingredients and whisk until smooth and emulsified.

Enter: Miso ginger dressing, emphasis on the ginger. If you love the zing of this root-like rhizome, this dressing will be your jam. You can toss it on a quick salad or use as a veggie dip, dollop a bit on some protein like baked fish or pan-seared chicken breast, or even use it as a marinade and stir-fry sauce. All you need is 6 to 7 ingredients: miso, ginger, a little sweetener like honey and brown sugar to balance out the spice, a bright punch of acidity like apple cider vinegar, and a bit of fat like toasted sesame oil and olive oil to make it nice and creamy. If you like things on the more savory side, add in a clove of grated garlic for that level-up in flavor, as well as a teaspoon of toasted sesame seeds for some texture.  For the ginger, you can leave the skin on if it’s really fresh and crisp—just make sure you wash it well. If it looks somewhat aged and shriveled, just go ahead and trim away the toughened skin and withered parts for an easier grating experience.
