Ingredients
1 cup uncooked orzo pasta1 small onion, finely chopped1 garlic clove, minced2 tablespoons butter2 cups frozen peas1 teaspoon grated lemon zest1/4 teaspoon salt1/8 teaspoon pepper2 tablespoons finely chopped fresh mint
Preparation
Cook orzo according to package directions. Drain and set aside.
In a large skillet, saute onion and garlic in butter until tender. Add peas. Cook for 2 minutes or until tender. Add the lemon zest, salt, pepper and orzo; heat through. Stir in mint.
