Ingredients
Cooking spray
12 Oreos, crushed
2 tbsp. butter, melted
Kosher salt
1 pt. mint chocolate chip ice cream
1 1/2 c. Cool whip or whipped cream
3 tbsp. chocolate curls
Preparation
Step 1 Line a 12-cup muffin tin with aluminum liners and spray liners with cooking spray. Step 2In a medium bowl, combine crushed cookies, melted butter, and a pinch of salt and stir until completely combined. Press cookie mixture into paper liners.Step 3Empty ice cream into a large bowl and stir with a spatula until softened. Use an ice cream scoop to fill each cupcake liner with ice cream. Freeze for 1 to 2 hours, or until solid.Step 4When frozen, remove cupcake liners and place on chilled serving dish. Pipe or dollop whipped cream onto the top of each “cupcake”, then sprinkle with chocolate curls and serve immediately.
