Ingredients

1 tablespoon butter1 cup cubed fully cooked ham1/2 cup chopped onion1/4 cup chopped green pepper4 eggs, lightly beatenSalt and pepper to taste

Preparation

Place butter in a microwave-safe 9-in. pie plate. Cover and microwave on high for 20-30 seconds or until melted. Add ham, onion and green pepper. Cover and cook on high for 1 minute. Stir in eggs, salt and pepper.

Cover and cook on high for 1-2 minutes or until a knife inserted in the center comes out clean. Let stand for 3 minutes or until completely set. Cut into wedges.
