Ingredients

2 Morcilla sausages

4 tbsp. butter

1 tbsp. sugar

2 Granny Smith apples

4 English muffins

8 slice provolone cheese

Chimichurri

Preparation

Step 1Using a fork, pierce the sausages a few times and cook in a sauté pan on medium-low heat until warm. Then, place in a 350° F oven for 6-8 minutes until fully cooked.Step 2Heat a small saucepan on medium-low heat; add 2 tablespoons butter and the sugar. When hot, add the diced apple and cook for 3-4 minutes or until golden brown.Step 3Heat a griddle or large nonstick sauté pan. While the pan is heating, cut each sausage in half (press down a little with a spatula to flatten). Top 4 English muffin halves with a slice of provolone and a flattened sausage. Then, top sausage with sliced raw apple and some of the diced cooked apple as well. On the other half of the English muffin, place a slice of provolone cheese. Carefully place the cheese-only half on top of the other half to create sandwich.Step 4Place each sandwich in the hot sauté pan (or griddle) with the rest of the butter. Press down a little with a spatula and cook until just golden on each side. Serve hot with some chimichurri on the side.
