Ingredients
1/4 cup chopped onion1 tablespoon olive oil1 small yellow summer squash, thinly sliced1 small zucchini, thinly sliced1 garlic clove, minced1 plum tomato, seeded and chopped1/2 teaspoon dried oregano1/4 cup crumbled feta cheese1/4 teaspoon salt1/4 teaspoon pepper
Preparation
In a large skillet, saute onion in oil until tender. Add squash and zucchini; saute 6-8 minutes longer or until tender. Add garlic; cook 1 minute longer. Stir in the remaining ingredients; heat through.
