Ingredients
1 onion
3 carrots
2 tbsp. extra-virgin olive oil
1 jar marinara sauce
1 package firm tofu
c. milk
nutmeg
3/4 lb. penne pasta
Preparation
Step 1Adult Slice the onion.Step 2Child Help chop the onion. Help grate the carrots.Step 3Adult Heat the olive oil in a medium saucepan over low heat. Add onions and cook 5 minutes. Add grated carrots and cook 5 minutes more.Step 4Adult and Child Add the marinara sauce to the saucepan. Stir carefully, using a long-handled wooden spoon and wearing oven mitts. Turn heat up to medium and cook for 5 minutes.Step 5Adult and Child Crumble the tofu into the sauce. Mix thoroughly. Cook over medium heat another 5 to 7 minutes, or until sauce begins to simmer.Step 6Adult and Child Measure and pour the milk into the sauce, adding more to taste. Grate the nutmeg and stir into sauce. Season to taste with salt. Serve over penne pasta.
