Ingredients
1 small onion, sliced2 tablespoons red wine vinegar1 tablespoon lemon juice1 tablespoon olive oil2 teaspoons minced fresh rosemary or 3/4 teaspoon dried rosemary, crushed2 teaspoons Dijon mustard1 garlic clove, minced1/2 teaspoon pepper1/4 teaspoon salt1/4 teaspoon ground ginger8 lamb loin chops (3 ounces each)
Preparation
In a shallow dish, combine the first 10 ingredients; add lamb chops and turn to coat. Cover and refrigerate for several hours or overnight.
Drain and discard marinade and onion. Lightly oil the grill rack.
Grill chops, covered, over medium heat or broil 4 in. from the heat for 5-7 minutes on each side or until meat reaches desired doneness (for medium-rare, a thermometer should read 135°; medium, 140°; medium-well, 145°).
