Ingredients
2 tablespoons butter, softened3/4 cup sugar1 large egg, room temperature1 large egg white, room temperature2 cups mashed ripe bananas (about 4 medium)1/4 cup unsweetened applesauce1/4 cup honey1 teaspoon vanilla or rum extract1-1/3 cups all-purpose flour2/3 cup whole wheat flour1 teaspoon baking soda1/2 teaspoon salt1/4 cup chopped pecans
Preparation
In a large bowl, beat butter and sugar for 2 minutes or until crumbly. Beat in egg, then egg white, beating well after each addition. Beat on high speed until light and fluffy. Stir in the bananas, applesauce, honey and extract. Combine the flours, baking soda and salt; gradually add to banana mixture just until moistened.
Pour into a 9x5-in. loaf pan coated with cooking spray. Sprinkle with nuts. Bake at 325° for 60-65 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack to cool.
